After careful harvesting of the grapes in small-capacity boxes, the grapes are immediately pressed in a pneumatic press; the process starts with a 24-hour maceration at controlled temperature, followed by the beginning of fermentation in stainless steel vats and then transferred to 500-liter barrels with temperature control, where the fermentation is gently completed. Periodic batonnage and continued aging in barrels until the end of April.
